Our
research tells us that people did not start growing grain to make
bread as a staple. This idea flies in the face of orthodox academic
archaeological beliefs and is controversial.
We find that the earliest hunter gatherers stumbled upon malting, and how to synthesise sugars from wild cereals, maybe as long ago as 20,000 years.
Malt and malt sugars predate both bread and beer.
These sugars are attractive in themselves and nutritious, and can be made into simple flat bread/biscuit on a hot stone by a fire. They can also be processed into beer, alcohol production, with the use of containers.

Is it good, or is it bad? Are we sad or are we mad?
